WEATHERFORD — Pineapple Upside Down Biscuits

1 (10 ounce) can crushed pineapple, drained, reserve juice

1/2 cup packed light brown sugar

1/4 cup (1/2 stick) butter at room temperature

10 maraschino cherries

1 (12 oz) pkg. refrigerated buttermilk biscuits (10 count)

Preheat oven to 400 degrees. Grease a 10 cup muffin tin.

Combine the pineapple, sugar and butter and mix well. Divide the pineapple mixture among the muffin cups.

Place a cherry in the center of each muffin cup. Place one biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 teaspoon pineapple juice over each biscuit. Bake for 12-15 minutes or until golden. Cool for 2 minutes. Invert the pan onto a plate to release the biscuits. Serve warm.

Chicken and Wild Rice Casserole

1 (6 oz) pkg. long grain and wild rice, cooked according to directions

4 cups diced cooked chicken breast

2 (10 1/2 oz. cans Cream of Chicken soup

1 cup mayonnaise

1 tsp. sage

1/2 tsp. poultry seasoning

1 (8 oz) pkg. Pepperidge Farm cornbread dressing mix

1/2 stick butter (1/4 cup)

 Put the rice in a greased 2 quart casserole. Layer the chicken on top of the rice. Mix the soup, mayonnaise and seasonings and pour this over the chicken. Sprinkle the dressing mix over the casserole and dot with the butter. Bake it at 350 degrees for 30 minutes or until bubbly.

Chopped Salad

1 large head romaine lettuce

1 large bunch arugula

1 pound ripe tomatoes, washed and cut into bite size wedges

2 medium yellow bell peppers, cut into 1/4 inch dice (remove seeds)

2 medium avocados cut into 1/4 inch dice

1/4 cup minced red onion

2/3 cup olives such as Kalamata pitted and quartered

3 hard boiled eggs

Dressing

34 cup extra virgin olive oil

3 tablespoons white wine vinegar

1 tablespoon Dijon mustard

Salt and freshly ground black pepper to taste

 Slice off the crunchy white from the bottom of the romaine. Wash and dry the green part and roughly chop or break into bite size pieces

 Remove stems from arugula. Wash, dry and roughly tear leaves into bite size pieces

 Place all ingredients but eggs in a salad bowl

 Whisk the dressing ingredients together and toss with the salad at least 15 minutes before serving

 Sieve the eggs and sprinkle over salad.

Speaking of stomach turning products; I saw a advertisement for Mucinex which shows hideous little “things” in your sinus talking about how they are scared of Mucinex being used. I saw this advertised during a cooking show where the next item after the sinus medicine was a recipe for cream of broccoli soup. Nuff said!

    In June, there were seven students who explored the flora and fauna of the rainforest through music at The Burch School of Music. Each child made his or her own rain stick, along with other crafts and art work. For two hours each day for five days, students explored a different level of the rainforest, starting with the emergent layer at the top, moving through the canopy, the understory, the forest floor and the rivers. They let bats fly (black balloons) and were eaten by a boa constrictor. On the last day they dressed as natives and drummed together.

  • Republican Women to meet Aug. 14 at Doss

    The Parker County Republican Women’s monthly meeting will be Aug. 14 at the Doss Heritage and Culture Center in Weatherford. The meeting is open to the public.

  • AgriLife to offer parenting classes Aug. 19, 21

    The Texas AgriLife Extension Service of Parker County will offer parenting classes on Aug. 19 and 21, 2014, at the Parker County Agricultural Services Center. The classes will be from 1-5 p.m. each day and will include lunch. The cost to attend the class is $10 per person for the two-day class. Scholarships are available.

    WEATHERFORD – CASA Hope for Children of Parker and Palo Pinto County has just been awarded certification by the National Court Appointed Special Advocate (CASA) Association. This certification recognizes that CASA Hope for Children is in compliance with National CASA’s high standards for quality child advocacy.
